Thaw the Wellington before baking by defrosting in the refrigerator 1 day in advance or at room temperature for 3-4 hours.
Medium Rare: Reheat oven to 220°C, bake for 14minutes, rest for 6 minutes.
Medium: Preheat oven to 220°C, bake for 18 minutes, rest for 8 minutes.
Medium-Well: Preheat oven to 220°C, bake for 23 minutes, rest for 12 minutes.

Medium Rare: Reheat oven to 210°C, bake for 30 minutes, rest for 10 minutes
